Salad Days

I just looked up the term Salad days, Wikipedia says it refers to a youthful time, accompanied by the inexperience, enthusiasm, idealism, innocence, or indiscretion of youth. Well I don't know about  you, but summer seems full of idealism and innocence to me, and it always makes me feel a little younger to grab a cool glass of tea or lemonade and a fresh salad and head out for a little down time in the shade!
With the weather heating up, it has been in the 90's here for the past two days, I love a cool, easy salad for dinner.Here is a good one to try.
Asparagus with Tomatoes and Feta, served warm or cold. We tried it warm and I added a splash of balsamic viniagrette. Delicious and healthy. You can find the recipe here.

  1. That looks delicious! I made a grilled corn salad recently. It is a Bobby Flay recipe and it was delicious. It had a homemade basil dressing on it. Here is a link to his recipe:

    At least one day a week the secret agent and I have a nice healthy salad for dinner...no meat.

    Just a little way to try to eat healthy and also it is just too darn hot to cook somedays!

    I just discovered roasted fresh beets in a salad. If you grew up eating the canned stuff, you will be amazed at how great fresh beets taste. A world of difference. And talk about nutritious.

  3. Oh, that does look good! I love these "salad days". Hubby grills chicken and I throw it on a salad with a bbq ranch dressing. Nice summery meal.

    We often have freshly cooked beetroot, chopped with balsamic, sliced tomatoes and cucumber.

  12. I agree with BJ, it looks gorgeous and delicious! Thank you for posting something healthy...some bloggers (MOI!!) have been making rather unhealthy things as of late. ha ha. No regrets...

    Went to the local fruit stand and bought the best thin and tender asparagus - locally grown - the other day. I am going back there today and will pick up the ingredients for your salad. I make a spinach salad with fresh lime and olive oil dressing, feta, roasted pin nuts, raisins, slivered carrots,red onions, tomatoes and poached chicken. We also love tri tip salad on romaine with blue cheese and red onions. Now I am hungry....

  14. There seems to be a world wide fixation with feta cheese....one of the only cheeses I really don't like. But salads? I'm a HUGE fan!
