Pheasant Soup

Earls Uncle Arthur is quite the hunter. This week he brought us 2 pheasants for a dinner party we had on Thursday. I had never had pheasant before. Earl roasted it and it was good. We had some leftovers and made this soup. It is supposed to be pheasant and wild rice soup but we were out of wild rice and substituted plain white rice instead. The recipe calls for mushrooms and we had some dried morel mushrooms from this spring (Thanks again to Uncle Art!) so we threw some in.
All I can say is this is why God made pheasants. Oh yeah. This creamy filling soup was one of the best things I have ever eaten. You can find the recipe here. We also substituted a little white wine for the Sherry and half and half for the cream. Just so you know. Hot soup is perfect on a snowy, blustery day. We got 12 inches yesterday. It is still snowing now and I think we are having the rest of this with fresh crescent rolls for dinner:>) YuM!

  2. OH, this looks and sounds so fabulous. I have had pheasant several times as Bill is a hunter, too. Never even thought to make some into a soup...yummy...
    We don't have snow nor really cold weather here yet but we sure are having a large bowl of chili, crackers, cheese and onion for lunch today...

  3. Oh, I haven't had pheasant for years! When I was young my father went pheasant hunting every year and he was always very successful. My sweetheart brought home quite a few when we lived in Eastern Oregon early in our married life. Your soup sounds wonderful.

  5. It looks yummy !! I am pretty sure there isn't a pheasant in all of Las Vegas though, lol !! So, I wont get to try this. :) Your tree is beautiful :) I hope that you and your family have such a Blessed Christmas and that this new year brings you lots of Goodness, Joy and Prosperity :) You deserve it my friend :)

  8. Dearest Kathy, just thinking of you this morning and wondering if Earl has had any job offers? I know this must be a really hard time for ya'll and I'm sorry you are having to go thru this valley. I also know how strong your faith in God's love is so I know you are ok. I have the feeling that work will come soon for Earl and things will get back to normal.(whatever NORMAL is).

  10. I'm like Adrienne...my dad was a hunter and I've had pheasant, duck, etc....but not in years. I will have to try this with chicken though...the one in the crockpot now!

  11. The soup looks absolutely yummy. I yhink you can make a soup out of just about any kind of meat, fowl or fish just by substitution. I have roasted alot of birds, including pheasant. At my lake hous a friend once gave me a rabbit he had hunted. I was grossed out cutting it up but I made an elegant dish of rabbit simmered in red wine. I took a plate of it to him and he went nuts. It was worth the gross part!!LOL

  12. My husband used to hunt pheasants. I always enjoyed roasting them, just not cleaning them! Your soup looks delicious.
