Grilled Pesto Chicken Packets are super easy and could be made ahead and just thrown on the grill. The whole family loved them:>) Just start out with:
4 small zucchini (cut into 1/2 inch slices)
8 Roma tomatoes (cut into 1/2 inch slices)
1 vidalia sweet onion (cut into 1/2 inch slices)
4 skinless, boneless chicken breasts (1 1/4 lbs. total)
and 1/2 cup of basil pesto.
I sprayed the foil for the packets with Pam and then layered the chicken and veggies, topped with 2 Tbsp. of pesto.
