Home Made Marshmallows

Today we take Victoria back to school. I'm going to miss my girl! To make her return a little sweeter, we made home made marshmallows last night. First time ever and I thought they would be difficult. They are SO easy! I used this recipe, and just a note, she says to grease the pan, then line it with saran wrap. Line it first then grease it or your mallows will stick to the wrap!
 Like I said, the recipe is super easy. No candy thermometer involved. Boil the syrup for a minute, add to the gelatin and water and whip on high for 12 minutes.
 At this point it is like thick marshmallow cream, but get it in the pan fast because it stiffens even more pretty quickly!
 We started out tossing them in powdered sugar, but we didn't have enough and Earl suggested we try cocoa. With the sugar in the marshmallows it isn't bitter at all! Just delicious.
And what did we do with our home made marshmallows? Packaged them up with hot cocoa and candy cane stirring sticks for a sweet new years treat for the girls on her floor!

  6. What a great idea for your daughter to treat her friends with. I made marshmallows a couple of weeks ago for the first time ever and yes, they are ever so easy. I lined my pan with parchment paper and greased it.

    I find them way too sweet, but if I make hot chocolate from milk and unsweetened cocoa powder and pop in two marshmallows, it's perfect!

  10. I will have to try this recipe! The last time I made marshmallows it was like a science experiment. A sugary sweet experiment complete with props. This sounds way more fun.:)

  11. That Earl is pretty darned smart! I wouldn't have been able to come up with that. Of course I called my recipe today turkey chili. And my friend Nola corrected me that it is taco soup. I'm not so swift in the kitchen...

  13. I love this idea!! I took my son back to school today. I've only cried once since I left. The weather was a bit treacherous on I-94 with several accidents and a news crew. We have sad hearts together tonight as we miss our kids. Thinking of you!

  15. Hi Anita, I'm not sure about how long they last. I sent almost all of them to school with my daughter to pass out as treats on her floor, I doubt they will last three days there! lol. I doubt that they actually "spoil", they are all sugar so there really isn't anything in them to go bad. I imagine, if anything, the texture may change, maybe they get tougher?

  20. I love to make marshmallows but haven't for awhile. I'd spread them out on a cookie sheet with sides then use cookie cutters to make cute little shapes. So fun to float a little heart or star in your hot chocolate. Thanks for the inspiration. Mimi
